Soup for the Soul: Recipes for a Cold Day

  1. 2 tbsp butter
  2. whole onion, diced
  3. garlic and red pepper flakes, to taste
  4. 1/4 cup flour
  5. 3 cups of vegetable or chicken broth
  6. 1 can of diced tomatoes
  7. 8 oz. tortellini
  8. 1/2 cup Parmesan cheese
  9. Spinach, to taste
  10. 1/2 cup cream
  11. salt & pepper, to taste
  12. basil, to taste
  • Melt two tablespoons of butter in a pot and cook a whole onion, diced.
  • Add garlic and red pepper flakes and continue to cook for about one more minute.
  • Add 1/4 cup of flour and cook for another minute.
  • Add three cups of vegetable broth or chicken broth, a can of diced tomatoes, 8 ounces of tortellini, and let it boil.
  • When it boils, bring down the heat, and wait for the tortellini to cook for about ten minutes.
  • Add the half cup of Parmesan cheese and let it melt.
  • Add your spinach and the cream, salt and pepper.
  • Turn off the stove, remove from the heat, and top with basil. Enjoy!


Creamy Chicken and Rice Soup


  1. 1/2 cup rice
  2. butter, to taste
  3. 1 onion
  4. 1 garlic
  5. 1/4 cup carrots
  6. 1/4 cup celery
  7. 1 lb chicken breast
  8. milk/heavy cream, to taste
  9. lemon zest, to taste
  • The first thing you’ll do with this rice recipe, is of course, cook the rice.
  • In another pot, melt butter, and add onion, carrots, and celery, and when tender, add garlic.
  • Add four and a half cups of chicken broth, and 1/4 teaspoon each of marjoram, thyme, sage, and rosemary, and add salt and pepper.
  • Bring it to a boil, then add a pound of chicken breasts, then cover with a lid until the chicken is cooked. When the chicken is cooked, take it out of the pot then shred it. While you do this, put the rice into the soup.
  • In another pan, melt a little more butter and add flour to it. Whisk in milk until it thickens, then add that to the soup.
  • When the soup thickens after about five minutes, add the chicken back and let it simmer.
  • Add the heavy cream and lemon zest, and serve warm.


Baked Potato Soup

Who doesn’t love a nice warm serving of baked potatoes? Try doing it in soup form! To make this, you’ll need to:


  1. 6 bacon strips
  2. 1 cup melted butter
  3. 1/2 cup flour
  4. 8 cups of milk
  5. 4 peeled and cut potatoes
  6. 1/2 cup chopped green onions
  7. 1 cup shredded cheddar chesse
  8. 1/2 tsp salt
  9. 1/2 cup sour cream
  • Cook about six slices of bacon and crumble them.
  • Put them in a pot with a cup of melted butter.
  • Add half a cup of flour to that pot and while stirring, add eight cups of milk, four peeled and cut potatoes, and half a cup of chopped green onions.
  • Let it boil for about twenty minutes, then add a cup of shredded cheddar cheese, and half a teaspoon of salt.
  • Cover and let boil for about twenty more minutes. Add some more bacon and half a cup of sour cream, and cook for about five minutes.
  • Serve hot!
